Ginataang langka, is a Filipino vegetable stew made from unripe jackfruit in coconut milk and spices. The dish includes a wide variety of secondary ingredients like seafood, meat, and other vegetables. The dish also commonly adds bagoong alamang (shrimp paste) and may be spiced with chilis or soured with vinegar. Notable variants of the dish are ginataang kamansi and ginataang rimas which use breadnut and breadfruit, respectively.



Jackfruit’s thick, spiny outer shell and white sappy interior can entail a bit of work to prepare. Fresh is always best but in this case, I prefer the peeled and cut langka available in most Asian supermarket’s frozen section. These conveniently packed langka definitely make cooking this dish a breeze. I also like to use danggit to add flavor but you can easily substitute shrimp, pork or other types of dried fish such as soriso or dilis. Here are the ingredients of Ginataang Langka. 1 lb unripe jackfruit; peeled and chopped.1 large onion diced. 1 piece shrimp cube. 5 cloves crushed garlic. 3/4 cup tomatoes diced. 3 to 5 pieces red chilies. 3 cups coconut milk. 3/4 cup water. 1/2 cup fried dried fish daing, bones removed. The secret to making a great “Young Jackfruit in Coconut Milk” is not the meat broth or any bits of meat for that matter. It is all about the quality of your coconut milk. Coconuts grow there everywhere. You can walk down to your corner market and by request someone will extract the coconut milk right on the spot. And when you buy it, you get two kinds. The first extraction is the cream or “kakang gata“. It is thick, heavy, and fatty. The second extraction is the coconut milk or “gata“.

Here are the instructions on how to cook Ginataang Langka. 1st step. Heat a wok or a cooking pot and pour-in the coconut milk. Bring to a boil. 2nd step. Add the garlic and onions and cook for 3 to 5 minutes while continuously stirring the mixture.3rd step. Put-in the tomatoes and red chilies. Continue stirring to prevent lumps from forming. 4th step. Add the fried dried fish and cook for 5 minutes. 5th step. Pour-in water and allow re-boiling. 6th step. Add the chopped jackfruit then mix with the other ingredients. Simmer for 5 to 8 minutes. 7th step. Put-in the shrimp cube then stir to ensure that the ingredients are properly distributed. Simmer until the liquid dries up. 8th step. Transfer to a serving plate then serve. 9th and last step. Share and enjoy!
